When most Americans think of beans, they think first of garden-type fresh beans such as green beans, string beans and wax beans.  But nutritionists think first of legumes — those seed-bearing pods such as lentils, chickpeas, dry beans such as black, lima, pinto, kidney and navy beans.

Legumes are a good source of protein and dietary fiber. They have no cholesterol and very little fat and sodium. They provide lots of potassium and some calcium and iron. Though you cannot live on beans alone but they can go a long way toward fulfilling important nutritional goals especially fiber and protein.
